Historically, herbs and spices are used for their flavor-enhancement characteristics and for their medicinal properties. The rising number of chronic diseases and the corresponding rise in health care costs is propelling interest among researchers and the public for these food related items for multiple health benefits, including a reduction in cancer risk and modification of tumor behaviour.

Below is a list of herbs that contain active phytochemicals which could reduce cancer risk and their culinary use in daily food preparation.
